I used 2 eggwhites that I whipped until they were stiff, then I added 115g caster sugar and kept on whipping until the mix was shiny and a bit sticky. I spooned my meringue on to a baking tray covered in baking paper and put the meringues in the oven for 30 minutes on Gas mark 1/ 140 degrees. After 30 minutes turn down the oven to Gas mark 1/2 / 120 degrees and let the meringues bake for an additional 30 minutes.
Let the meringues cool while you whip up some cream and, for the amazing part, blend in some lemon curd in the cream. This will make the whole thing so unbelievably amazing, with my first bite I wondered if I had ever tasted anything better? And I don't think I have. Because the boyfriend doesn't like, cream, meringue or lemon curd, this is a dessert I made when I was alone and basically ended up having this for lunch. No regrets, it was amazing! Make it, you won't regret it!
