120 g dark flour
100 g caster sugar
1 1/2 teaspoons baking powder
Grated lemon zest from 1 lemon
40 g butter, at room temperature
120 ml milk
Add all the ingredients to an electric mixer and beat until the mixture is grainy but well combined.
Spoon the mixture into paper cases until two-thirds full and bake in the oven at 170 degrees/Gas 3 for 20-25 minutes.
