One of my favourite things about summer is all the BBQ'd food I get to eat, anything is amazing once it's gotten it's time on the grill. The challenge is in acessorizing the meat/chicken/fish that is the main part, and for summer, I think easy is better. Who has time to spend in the kitchen when the sun is shining? Not me. So I am favouring the simple solutions, no recipe needed because there is no recipe. Just get creative and if you need inspiration this is what I have been making lately.
The only thing that might need a small explanation is the tomato tart below, super easy to make and a winner among guests I have let it inspire other recipes as well. For this particular one, take some puff pastry, I use the frozen kind, and when it is room temperature, roll it out thinly. Prick with a fork and place sliced tomatoes on top, brush with olive oil and add spices of your choice (I love garlic, a bit of chilli, rosemary and salt&pepper). It goes in the oven and needs 15-20 minutes on 225 degrees celsius which is a bit less than gas mark 8.
