I'm not going to tell you I love mushrooms, they are quite boring and uninspiring and I eat them, just not too often. Until I had stuffed mushrooms! For dinner the other day we added all the herbs we wanted to a bowl, some spoons of ricotta went in and we got stirring. Then we simply filled the mushrooms with the ricotta mix and topped with shredded cheese, bam in the oven and done! I could gladly have this for dinner for the next couple of weeks.
The finished product! We had this with some excellent beef and a green salad but I think this is a winner for BBQ's, with a roast chicken, on its own. The possibilities are endless.
