Ripe bananas always means banana bread, which is why I buy too many bananas and patiently wait for them to ripen. If the boyfriend happen to eat one to many, he knows how upset I get. This is banana bread I am talking about. Then when I banned sugar from my diet, it proved difficult to make banana bread that would still taste like banana bread should. So after googling and not getting anywhere, I went to Smitten Kitchen and found my new favourite recipe. Yes, right here. Although I cut the sugar and replaced the maple syrup with honey and opted out of the millet, the bread is moist, sweet, chewy and amazing. This one didn't last long at home, even the boyfriend couldn't resist, which is always a good sign.
